Women face iron deficiency all too often, which can impact our day to day lives through lack of energy, weakness, and fatigue.

METHOD

Place 2 cups of water, 1/4 cup of black strap molasses, 7 1/2 cups sugar-free fruit juice (Erin recommends pomegranate juice or cherry juice concentrate) and all of the herbal ingredients into a large saucepan. (Do not include the raw honey; it will be added later in the process.)

Bring the mixture to a boil over medium heat, then reduce the heat to low. Allow to simmer, stirring occasionally, for 1 hour or until reduced by almost half, then remove from the heat. Allow the syrup to cool to a lukewarm temperature, strain out the herbal ingredients. Stir in 1 cup raw honey and 1/2 cup brandy (optional). If you like your syrup extra thick, you can always pump up the honey content.

Leave the syrup to cool completely and then decant into sterilised bottles. Seal securely and label, noting the ingredients, remedy recipe name and date made. - Store in the fridge for up to 6 months. Although the brandy helps to extend the shelf life, it can be omitted.

     * Note that your syrup will only stay fresh for 1-2 months without the alcohol content.
